If I miscount the number of dry contact, analog inputs, or outputs, can I correct this in the field?

Yes! You can add Verbatim upgrades to increase the number of dry contact and/or analog inputs in the field. Also, output upgrades can be done. Proper handling of additional integrated chips, insertion of circuit boards and changing the display may be required.
